When it comes to peanut butter, I’m one of those, “the more the merrier” kind of people.  Even when it comes to peanut butter on pizza.  This Vegan Thai Pizza does not disappoint.

Vegan Thai Pizza

Ingredients

Pizza Dough

  • 1 3/8 cup water lukewarm
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp agave
  • 4 cups 100% whole wheat pastry flour or regular whole wheat flour
  • 1 1/2 tsp salt
  • 2 1/2 tsp active dry yeast

Pizza

  • 1/2 cup natural peanut butter no sugar listed in ingredients
  • 3 Tbsp Bragg Liquid Aminos
  • 1 Tbsp rice wine vinegar
  • 1 inch fresh ginger minced
  • 1 Tbsp bottled minced garlic
  • 1 tsp sesame oil
  • 1 can jackfruit rinsed, drained, and shredded, about 20 oz
  • 1 red bell pepper diced
  • 1/2 pint button mushrooms sliced
  • 1/2 red onion thinly sliced
  • 1 cup cilantro chopped

Instructions

Pizza Dough Stand Mixer Method

  • Add water, oil, and honey to a stand mixer. Add flour. Add yeast to the center and salt to the side. (Take care not to let yeast and salt touch.)
  • Fit mixer with dough hook. Mix on low speed until dough ball forms and cleans the sides of the bowl. (2-5 minutes)
  • (If dough ball is too sticky, add more flour, 1 T at a time. If it is too dry, add more water, 1 T. at a time.)
  • Divide dough in half.
  • Roll dough out into desired shape. This recipe makes 2 large rectangles or 4 12-15 inch rounds.
  • Reserve any unused dough in a dough ball. Wrap tightly in plastic wrap, then stow in a large zip top plastic bag. Freeze.

Pizza Dough Mix by Hand Method

  • Mix all ingredients in a large bowl with a wooden spoon. As soon as the dough is too tough to stir with a spoon, transfer to a lightly floured surface and knead by hand 10 minutes, or until dough is pliable and doesn't stick to hands.
  • (If dough ball is too sticky, add more flour, 1 T at a time. If it is too dry, add more water, 1 T. at a time.)
  • Divide dough in half.
  • Roll dough out into desired shape. This recipe makes 2 large rectangles or 4 12-15 inch rounds.
  • Reserve any unused dough in a dough ball. Wrap tightly in plastic wrap, then stow in a large zip top plastic bag. Freeze.

Pizza

  • Preheat oven to 400.
  • Combine peanut butter, Bragg Liquid Aminos, vinegar, ginger, garlic, and sesame oil in a bowl. Whisk until well combined.
  • Spread peanut butter mixture evenly on shaped dough. Top with jackfruit, bell peppers, mushrooms, and onions.
  • Bake at 400 for 10 minutes or until dough is golden brown on edges. Top with cilantro before serving.

Notes

For non-vegan, feel free to use 2 boneless, skinless chicken breasts, cooked and shredded, in place of the jackfruit.
