Ingredients
- 1/2 tsp extra virgin olive oil
- 1 strip tofu smoky tempeh
- 1 sheet nori seaweed
- 1/3 cup brown rice cooked according to package directions
- 1/4 avocado
- 1/4 carrot
- 1/4 cucumber
Instructions
- Heat oil in large skillet over medium heat. Add tempeh; cook, stirring frequently, for 2 to 3 minutes, or until crisp.
- Place nori in blender or food processor. Process into crumbs. Add to bowl. Chop tempeh, carrots, avocado, and cucumber. Add to bowl. Stir well.
- Sprinkle with Nori Gomasio (if desired).
