Taco Burgers, Chili Fries, Carrot Slaw

Ingredients

Taco Burgers

  • 1 lb ground beef 90% lean or leaner
  • 1/2 cup salsa no sugar listed in ingredients, additional for topping if desired
  • 1/2 cup pinto beans rinsed, drained, and mashed
  • shredded lettuce optional
  • cheddar cheese shredded, optional
  • 2 tomato optional
  • 4 each 100% whole grain hamburger buns no high fructose corn syrup

Sweet Potato Chili Fries

  • 4 sweet potato medium, peeled and wedged (8 wedges each)
  • 2 Tbsp extra virgin olive oil
  • 2 tsp Chili Powder
  • 2 tsp kosher salt
  • 2 tsp pepper

Carrot Slaw

  • 10 oz carrot shredded, 1 package
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1/4 cup cilantro chopped
  • 2 tsp bottled minced garlic
  • 1/2 tsp Chili Powder
  • 1/2. tsp paprika
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper optional

Instructions

Taco Burgers

  • Combine beef and salsa in a bowl. Mix well. Form into 4 patties. Pan-sear or grill 4 minutes on each side or until cooked through. Serve on buns, and top with mashed beans. Top with cheese, lettuce, tomato and salsa, if desired.

Sweet Potato Chili Fries

  • Sweet Potato Chili Fries: Combine potato wedges and olive oil in large bowl. Add spices. Toss to coat well. Add potato wedges in a single layer on a baking sheet. Bake at 400 for 45 minutes or until soft and beginning to brown. Turn broiler on and broil an additional 3 minutes.

Carrot Slaw

  • Carrot Slaw: Combine all ingredients. Allow to marinate 30 min before serving.

Leave cheese out for Dairy Free
