Another 1-2-3 Eat! meal. Steak and Shrimp (Surf-n-Turf), paired with bacony beet greens and a baked sweet potato makes a full meal.
Ingredients
Surf-n-Turf
- 1 lb sirloin steak
- 2 tsp kosher salt
- 1 tsp pepper
- 1 lb shrimp thawed
- 2 tsp extra virgin olive oil
- 1 tsp kosher salt
- 1 Tbsp bottled minced garlic
- 5 Tbsp unsalted butter
- 1/4 tsp salt
- 1 Tbsp lemon juice
- 1 Tbsp fresh parsley chopped
- 1 Tbsp fresh basil chopped
- 3 slices uncured bacon cooked until crisp, and crumbled
- 1/2 red onion thinly sliced
- 3 cups beet greens chopped
Bacony Beet Greens
- 1 Tbsp Balsamic Vinegar
- 2 Tbsp orange juice juice from half an orange
- 3/4 tsp salt
- 4 sweet potato medium
Instructions
Surf-n-Turf
- Preheat oven to 250. Heat oil in a cast iron or heavy bottomed skillet over med heat until hot. Sprinkle steak with salt and pepper. Add steak to pan. Cook 1-2 min on each side or until nicely browned. Remove steak to broiler pan fitted over drip pan. Cook for 25 min or until it reaches an internal temperature of 129 degrees (using a meat thermometer). Remove from oven. Increase oven temp to 400. While oven is coming up in temperature, toss shrimp in oil and salt. Arrange in a single layer on a baking sheet. Bake at 400 6-8 minutes.
- Meanwhile, heat butter in same skillet that was used for steak. Add garlic. Saute 30 sec. . Add butter. When butter is melted, add lemon juice, salt, and herbs. Keep warm.
- Slice the steak into thin ribbons. Plate the steak. Arrange the shrimp over the steak. Drizzle with sauce.
Bacony Beet Greens
- Cook bacon in large skillet until crisp. Remove with tongs and place on paper towel. In same skillet, cook garlic, red onion, and salt. Cook 5 min or until onion is soft. Add beet greens and cook until wilted, about 5 minutes. Add balsamic vinegar and orange juice. Stir and heat one more minute. Remove to serving platter and sprinkle with crumbled bacon.
Baked Sweet Potatoes
- Baked Sweet Potatoes: Preheat oven to 400. Wash potatoes and pierce skin several times with a fork. Bake at 400 for 45 min - 1 hour, or until soft in the centers.
