This healthy Southwest Chopped Salad with Jalapeno-Ranch Dressing is super simple and has a the most amazing jalapeno flavor. You can add to this with additional veggies, black beans, corn, and even homemade tortilla strips if you like.
Ingredients
Southwest Chopped Salad
- 3 1/2 oz green leaf lettuce shredded, such as Fresh Express®
- 7 oz coleslaw mix
- 8 green onion sliced, divided
- 1 cup cheddar cheese grated
Jalapeno-Ranch Salad Dressing
- 8 oz plain yogurt
- 1/2 jalapeno stemmed and seeded
- 5 pickled jalapeno slices drained
- 1/2 Tbsp bottled minced garlic
- 1 Tbsp onion chopped
- 1/2 Tbsp lime juice
- 2 Tbsp buttermilk powder
- 1/2 cup milk
- 1/4 cup cilantro plus more for garnish, if desired
- 1/2 tsp onion powder
- 1 tsp lemon juice
- 1 tsp salt
- 1/4 tsp pepper
Instructions
Southwest Chopped Salad
- Combine lettuce, coleslaw mix, and half the green onions in a large bowl. Serve salad topped with cheese, additional green onions, if desired, and drizzled with dressing.
Jalapeno-Ranch Salad Dressing
- Combine all ingredients in a blender. Blend until smooth.
