This healthy Southwest Chopped Salad with Jalapeno-Ranch Dressing is super simple and has a the most amazing jalapeno flavor. You can add to this with additional veggies, black beans, corn, and even homemade tortilla strips if you like.

Southwest Chopped Salad with Jalapeno-Ranch Dressing

Ingredients

Southwest Chopped Salad

  • 3 1/2 oz green leaf lettuce shredded, such as Fresh Express®
  • 7 oz coleslaw mix
  • 8 green onion sliced, divided
  • 1 cup cheddar cheese grated

Jalapeno-Ranch Salad Dressing

  • 8 oz plain yogurt
  • 1/2 jalapeno stemmed and seeded
  • 5 pickled jalapeno slices drained
  • 1/2 Tbsp bottled minced garlic
  • 1 Tbsp onion chopped
  • 1/2 Tbsp lime juice
  • 2 Tbsp buttermilk powder
  • 1/2 cup milk
  • 1/4 cup cilantro plus more for garnish, if desired
  • 1/2 tsp onion powder
  • 1 tsp lemon juice
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

Southwest Chopped Salad

  • Combine lettuce, coleslaw mix, and half the green onions in a large bowl. Serve salad topped with cheese, additional green onions, if desired, and drizzled with dressing.

Jalapeno-Ranch Salad Dressing

  • Combine all ingredients in a blender. Blend until smooth.
