Now you can have your Shrimp Cakes and eat them too because they’re 100% healthy! Not sure if Bubba Gump ever listed Shrimp Cakes in his iconic list of shrimpisms but it doesn’t matter too much because these healthy Shrimp Cakes with Garlic Sauce are worth making, whether recognized by Bubba Gump or not. (Hint: start by roasting the garlic, up to a week ahead.)
Ingredients
Shrimp Cakes
- 2 lbs shrimp
- 1/2 cup 100% whole grain breadcrumbs
- 1/2 cup flax meal
- 1/2 tsp Italian seasoning
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1 tsp lemon zest
- 1 Tbsp bottled minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 each egg
- 1/4 cup fresh parsley
- 4 Tbsp avocado oil or coconut oil
Garlic Sauce
- 1 head garlic
- 1 tsp extra virgin olive oil
- 2 Tbsp plain yogurt
- 2 Tbsp mayonnaise clean
- 2 tsp lemon juice
- 1 tsp lemon zest
Instructions
Shrimp Cakes
- Remove shells and tails of shrimp. Bring large pot of water to a boil. Add shrimp. Cook 3-4 minutes or until opaque. Drain and chop. (Instant Pot: add 1 cup water to the insert of an Instant Pot. Add metal steamer basket. Add shrimp. Lock lid; set valve to sealing. Program for manual-high and 2 minutes. Allow at least 5 minutes NPR. Remove shrimp and chop.)
- Add chopped shrimp, breadcrumbs, flax meal, italian seasoning, onion powder, paprika, lemon zest, garlic, salt, pepper, eggs, and parsley. Stir well and form into 8 patties.
- Heat 2 Tbsp oil in a medium skillet. Add 4 patties. Cook until golden brown, about 2 minutes. Flip and cook an additional 2 minutes, or until golden on both sides. Remove to a paper-towel-lined plate. Repeat with remaining oil and remaining patties. Serve with Garlic Sauce.
Garlic Sauce
- Preheat oven to 400. Slice top 1/2 inch off of garlic head. Place on small piece of foil. Drizzle with oil. Wrap foil tightly around it. Place in preheated oven and let roast 30 minutes. Carefully unwrap and remove two cloves. Reserve the rest of the roasted garlic for another use.
- Mash garlic and add to a small bowl. Add yogurt, mayonnaise, lemon juice and lemon zest. Mix well.
