Rutabaga Fritters are a great alternative to standard potato hash browns. Carbs are lower in rutabagas than regular potatoes and the taste is similar.

Ingredients
Rutabaga Fritters
- 1 lb rutabaga
- 1 lb sweet potato
- 4 ea egg
- 1 bunch green onion
- 6 Tbsp flax meal
- 1 cup parmesan cheese fresh grated
- 1 tsp salt
- 1/2 tsp pepper
- 1 pinch cayenne pepper if desired
- extra virgin olive oil for sauteing
Broccoli with Cheese Sauce
- 2 lbs broccoli cut into florets
- 3/4 cup cheddar cheese
- 1/4 cup milk
Instructions
Rutabaga Fritters
- Peel rutabaga and potatoes.
- Shred with food processor or cheese grater. Squeeze any excess moisture out with clean kitchen towel or paper towels.
- Beat eggs. Mix in green onions, parmesan cheese, and grated vegetables. Add flax meal. Mix until slightly sticky. Form into 8 patties. Season patties with salt and pepper.
- Heat oil in large nonstick skillet. Add patties. Cook 5 min per side, or until cooked through and golden on each side.
Broccoli with Cheese Sauce
- Place broccoli in steamer basket on stovetop. Steam 8-10 min or until tender-crisp.
- Meanwhile, heat small saucepan over med heat. Add cheese and milk, and stir constantly, until cheese melts and sauce becomes smooth. Pour sauce over cooked broccoli.
