Ingredients
- 1/2 red onion finely diced
- 2 Tbsp bottled minced garlic
- 1 Tbsp extra virgin olive oil
- 6 bell pepper halved and seeded
- 15 oz ricotta cheese
- 1 pint grape tomatoes halved
- 1 tsp lemon zest
- 10 leaves fresh basil cut into ribbons
Instructions
- Preheat oven to 350. Sauté onion and garlic in oil until fragrant, about 1 minute. Combine onion mixture, ricotta, tomatoes, and zest in a bowl. Stuff mixture into peppers. Place peppers in a baking dish. Bake at 350 for 45 minutes. Top with basil.
