Quick Ginger Zoodles

These quick ginger zoodles are as delicious as they are fast.  Cut the heat by reducing or eliminating the crushed red pepper.

Quick Ginger Zoodles

Ingredients

Zoodles

  • 3 zucchini zoodled
  • 3 cups baby bok choy chopped
  • 1 cup carrot grated
  • 4 green onion sliced
  • 1 Tbsp sesame seeds optional

Ginger Sauce

  • 1 Tbsp bottled minced garlic
  • 2 Tbsp fresh ginger minced
  • 2 Tbsp Bragg Liquid Aminos
  • 1 Tbsp pure maple syrup
  • 2 tsp sesame oil
  • 1 tsp crushed red pepper or to taste

Instructions

  • In a large saucepan, mix sauce ingredients. Bring to a boil, and let simmer 2 minutes.
  • Stir in bok choy, carrots, and green onions. Reduce heat to low. Add zoodles. Cook just until hot, about 2 minutes.

Sprinkle with sesame seeds before serving.
