These quick ginger zoodles are as delicious as they are fast. Cut the heat by reducing or eliminating the crushed red pepper.
Ingredients
Zoodles
- 3 zucchini zoodled
- 3 cups baby bok choy chopped
- 1 cup carrot grated
- 4 green onion sliced
- 1 Tbsp sesame seeds optional
Ginger Sauce
- 1 Tbsp bottled minced garlic
- 2 Tbsp fresh ginger minced
- 2 Tbsp Bragg Liquid Aminos
- 1 Tbsp pure maple syrup
- 2 tsp sesame oil
- 1 tsp crushed red pepper or to taste
Instructions
- In a large saucepan, mix sauce ingredients. Bring to a boil, and let simmer 2 minutes.
- Stir in bok choy, carrots, and green onions. Reduce heat to low. Add zoodles. Cook just until hot, about 2 minutes. Sprinkle with sesame seeds before serving.
