Clean Eating Patty Melts with smothered onions and 7-minute green beans! This recipe uses 100% whole grain (or sprouted grain) bread and clean, fresh ingredients.
Ingredients
Patty Melts:
- 1 lb ground beef 90% lean or leaner
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/2 tsp oregano
- 1/4 tsp pepper
- 2 tsp Dijon mustard
- 1 Tbsp bottled minced garlic
- 1 Tbsp unsalted butter
- 2 yellow onion medium, thinly sliced
- 8 slices 100% whole grain bread or hamburger buns if you prefer
- 4 sliced swiss cheese
7 minute Green Beans
- 1 lb green beans fresh, trimmed
Instructions
Patty Melts
- Preheat grill to medium. In a medium bowl, mix beef and next 6 ingredients. Form into 4 patties. Set aside.
- In a medium skillet, melt butter. Add onions. Cook onions 8-10 minutes, stirring often, until tender. Set aside and keep warm.
- Grill patties over medium heat, 6-7 minutes per side or until cooked through.
- Add bread to grill, for last 5 minutes of cooking. Place cheese on patties. Close grill. Cook 1 minute to melt cheese. Place patties on one slice of bread, top with onions and other slice of bread.
7 minute Green Beans
- In a medium saucepan, bring 2 quarts of water to a rolling boil. Add green beans. Cook for EXACTLY 7 minutes. (No cheating. I’ll come to your house.) Drain and serve.
