“Buon Cibo!” (That’s italian for “good food.” I know this because I googled it.) Seriously though, give this healthy Italian Chicken Pasta Salad a shot and tell me that phrase doesn’t apply!
Ingredients
Italian Chicken Pasta Salad
- 1 lb 100% whole wheat pasta rotini
- 2 boneless, skinless chicken breast
- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 can artichoke hearts drained
- 6 oz feta cheese crumbled
- 5 leaves fresh basil sliced into thin ribbons
Creamy Garlic Salad Dressing
- 1/4 cup extra virgin olive oil
- 1/2 cup apple cider vinegar
- 1 Tbsp bottled minced garlic
- 3 Tbsp lemon juice
- 2 Tbsp fresh basil
- 1 tsp himalayan salt
- 1 Tbsp honey
Instructions
Italian Chicken Pasta Salad
- Cook the pasta per package ingredients and drain. Cook the chicken anyway you like (boil, bake, grill, etc). Combine all ingredients (including dressing below) except cheese and basil in a large bowl. Divide salad among 4 bowls. Top with cheese and basil ribbons.
Creamy Garlic Salad Dressing
- Combine all ingredients in a blender. Blend until smooth.
