This homemade, healthy Irish pub cheese is perfect for your next gathering, or just your next cheese-and-crackers craving. It’s so simple to make, and is easy to make ahead, which reduces the stress on the day of the party (stress? What’s that!?)
Feel free to substitute non-alcoholic beer for real beer (but it’s still yellow tier so there’s no tier-benefit to the substitution.)
I found garlic cheddar at my local farmer’s market. You can look for it anywhere that sells gourmet cheese. (See notes for what to do if you can’t find garlic cheddar.)
Ingredients
- 16 oz garlic cheddar cheese see notes
- 4 oz cream cheese
- 1/2 cup beer
- 1 1/2 tsp dried mustard
- 1 tsp paprika plus more for garnish, if desired
Instructions
- Add cheddar to a food processor. Pulse to crumble. Add all remaining ingredients. Process until smooth. Serve with whole grain crackers, apple slices, whole grain french bread, or whole grain pita bread.
