Southern Pot Roast, Mashed Cauliflower

This healthy Southern Pot Roast (also commonly known as Mississippi Pot Roast) has a bold and tangy flavor from pepperoncinis.  I thought it was a bit odd the first time I heard of it, but after trying it, I was hooked.  I think you will be too.  We paired this with a super simple mashed cauliflower that will surprise you as well.

Southern Pot Roast, Mashed Cauliflower

Ingredients

Southern Pot Roast

  • chuck roast 3-5 lb
  • 2 Tbsp onion powder
  • 2 Tbsp dried minced onion
  • 1 tsp salt
  • 1 tsp dried parsley
  • 2/3 tsp celery seed
  • 3/4 tsp garlic powder
  • 1/2 tsp dried chives
  • 1/2 tsp ground turmeric
  • 1/4 tsp dried dill
  • 1/4 tsp pepper
  • 1 stick unsalted butter (1/2 cup)
  • 12 oz pepperoncini peppers with juice

Mashed Cauliflower

  • 1 head cauliflower large, cut into florets
  • 2 Tbsp unsalted butter
  • salt to taste
  • pepper to taste

Instructions

Southern Pride Pot Roast

  • Combine all ingredients in a slow cooker. Cook on low 8 hours or on high 6 hours. Shred meat. Serve over mashed cauliflower.

Mashed Cauliflower

  • In a large steamer basket, steam cauliflower until soft. Transfer to a blender. Add a little bit of the cooking water and the butter. Blend until smooth. Sprinkle with salt and pepper to taste.
