So fresh and delicious, this healthy Salmon-Kale Caesar Pasta Salad can be used as a main dish and will soon be in your regular rotation. Pack it early in the week in containers for lunch prep, pack it on ice for a family picnic in the park, or just whip it up for a quick weeknight meal. Would make a wonderful and unexpected contribution to a potluck! My whole family LOVES this one, so I’m going to tag it as kid-friendly! Would make great healthy school lunches too!
If you want to try the Instant Pot method, you will need a double pot-in-pot. We used this double pot-in-pot for testing purposes.
Ingredients
Salad
- 8 oz 100% whole grain bowtie pasta
- 6 oz baby kale
- 1 lb salmon fillet wild caught preferred
- 2 egg hard-boiled, optional
- 1/2 cup parmesan cheese grated
Caesar Dressing
- 2 Tbsp bottled minced garlic
- 2 1/2 Tbsp lemon juice
- 2 1/2 Tbsp lime juice
- 2 Tbsp rice vinegar
- 1 1/2 Tbsp extra virgin olive oil
- 2 Tbsp parmesan cheese grated
- 2 tsp mustard powder
- 1 tsp Bragg Liquid Aminos
- 1/4 tsp pepper
Instructions
Salad
- Bring medium pot of water to a boil. Preheat grill to medium.
- Cook pasta according to package directions. While pasta is cooking, place salmon on grill and grill 4 min per side or until salmon is cooked through and fish flakes easily when pricked with fork. Flake salmon and set aside. Drain pasta.
- Combine pasta, salmon, kale, and dressing in a bowl. Toss well. Sprinkle with parmesan.
Dressing
- Combine all dressing ingredients in a blender. Blend until smooth.
Instant Pot
- Add 1 cup water to Instant Pot. Add pasta and 2 cups water to one pot that will fit inside your instant pot. Add a layer of parchment paper to a second pot that will fit on top of the first pot. (Pot in pot method.) Add salmon to second pot. Cover both pots tightly and place on trivet. Lock lid; set valve to sealing. Program for manual-high and 4 minutes. When cook time ends, carefully move valve to venting to allow all remaining steam to escape. Carefully remove both pots. Flake salmon.
- Combine pasta, salmon, kale, and dressing in a bowl. Toss well. Sprinkle with parmesan.
