This healthy fruit tarts recipe uses our All Purpose Baking Mix for a healthy and beautiful tart crust. The cream and fruit top it nicely.
Ingredients
- 1 cup all purpose baking mix see below if you don't have any pre-made
- 2 Tbsp coconut sugar
- 1 Tbsp unsalted butter melted
- 8 oz cream cheese softened
- 1/4 cup honey
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 cups fresh fruit berries and kiwifruit suggested
- cooking spray
All Purpose Baking Mix
- 4 cups whole wheat flour
- 2.5 Tbsp baking powder
- 3 tsp salt
- 3/4 cup buttermilk powder soy milk powder for dairy free
- 1/2 cup avocado oil or extra virgin olive oil
Instructions
- Heat oven to 375. Spray individual tart pans with cooking spray.
- Mix baking mix, coconut sugar, butter, and 3 oz cream cheese until soft dough forms. Press dough on bottom and up sides of 6 tart pans. Place prepared tart pans on a baking sheet. Bake at 375 for 9-11 min or until light brown. Cool completely.
- Mix remaining cream cheese, honey, and sour cream until smooth. (I used an electric mixer fitted with a beater, on medium speed. Filling mixed by hand might not be as smooth.)
- Spoon filling into cooled tart shells. Top with berries. Serve immediately or store covered in refrigerator.
All Purpose Baking Mix
- Mix all ingredients. Store in airtight container in freezer. (Note you only need one cup of this mix for the tart recipe.)
