When this healthy edible cookie dough first appeared in the 9010 Nutrition Community, a member asked, “Isn’t all cookie dough edible?” And, the answer is, of course it is! I mean, we’ve all done it. We’ve all licked the bowl, or the beaters, or grabbed a spoon, impatiently waiting for the oven to preheat. But, technically, you’re not supposed to eat raw eggs, so make this instead!
Ingredients
- 1/4 cup coconut sugar
- 1/4 cup honey
- 4 Tbsp unsalted butter
- 1/4 tsp salt
- 1/4 tsp vanilla extract
- 2 Tbsp milk
- 11 Tbsp 100% whole wheat flour about 1 1/2 cups
- 2 Tbsp cacao nibs
Instructions
- Cream sugar, butter, and honey, salt, and vanilla together with mixer until creamy and well combined. (Speed 4 on a kitchen aid stand mixer.) Or mix by hand in a small mixing bowl. Add milk and cream again until well combined. Stir in 1/2 cup flour until moistened. Add another 1/2 cup flour and stir until moistened. Add remaining flour, 1 Tablespoon at a time, until dough-like consistency is reached. Stir in cacao nibs. Store at room temperature up to 3 days or refrigerate up to 1 week.
