These grilled marinated vegetables go so well with a simple grilled chicken breast. It’s so simple but so tasty…the best kind of meal.
Ingredients
Grilled Chicken Breasts
- 4 boneless, skinless chicken breast
- 1 tsp salt
- 1 tsp pepper
Grilled Marinated Vegetables
- 1 red onion cut into large chunks
- 2 zucchini cut into bite sized chunks
- 2 yellow squash cut into bite sized chunks
- 1 pint baby bella mushrooms whole
- 1 red bell pepper cut into large chunks
- 1 orange bell pepper cut into large chunks
Marinade
- 1/4 cup extra virgin olive oil
- 1/4 cup Balsamic Vinegar
- 1 Tbsp bottled minced garlic
- 2 Tbsp honey
- 1 tsp pepper
- 1 tsp salt
Steamed Peas
- 1 bag frozen green peas steam-in-the-bag
Instructions
Grilled Chicken Breasts
- Preheat grill to medium. Spray rack with cooking spray. Sprinkle chicken with salt and pepper. Grill on medium-low 4 minutes per side or until chicken is done and juices run clear.
Grilled Marinated Vegetables
- Combine all vegetables and all marinade ingredients in a large zip top bag. Toss well to coat. Let marinate 1 hour. Preheat grill to medium. Add vegetables and marinade to a grill basket. Grill 20-30 minutes, stirring occasionally, or until vegetables are tender-crisp. 6 servings
Steamed Peas
- Prepare peas as directed on package.
