You’re probably used to grilled cheese and tomato soup, but you’ve probably never had it like this. This isn’t soup from a can. Try this Grilled Cheese and Tomato Noodle Soup.
Ingredients
Grilled Cheese Sandwiches
- 8 slices 100% Whole Grain Bread no high fructose corn syrup
- 4 oz sharp cheddar cheese 1 oz slices, real cheese only
- 2 Tbsp unsalted butter
Tomato Noodle Soup
- 1 can Diced Tomatoes 15 oz., undrained
- 1 1/2 tsp Italian seasoning
- 1/2 tsp pepper
- 4 cups vegetable broth 32 oz, no sugar listed in ingredients
- 2 zucchini halved lengthwise and cut into 1 in pieces
- 9 oz 100% whole wheat pasta such as bow ties
- 2 oz parmesan cheese optional
Instructions
Grilled Cheese Sandwiches
- Heat griddle or skillet over med heat until hot. While pan is heating, spread butter on one side of each slice of bread. Place one slice of bread, butter side down, in the pan. Top with cheese and second slice of bread (butter side up). Allow to cook about 2 minutes or until browned and crispy. Flip and cook other side 2 min or until browned and crispy and cheese is melted.
Tomato Noodle Soup
- Add tomatoes, and Italian seasoning, pepper, and broth to saucepan. Bring to a boil. Add zucchini and pasta. Simmer 9 minutes or until pasta is cooked and zucchini is tender. Sprinkle with cheese, if desired.
