This Easy Minestrone Soup Recipe is one you can even make on a weeknight. It uses 100% whole grain pasta and has plenty of healthy veggies
Ingredients
- 1 can Diced Tomatoes 15 oz
- 1 can red kidney beans 15 oz
- 1 package frozen mixed vegetables 10-12 oz
- 4 cups vegetable broth
- 1/2 cup onion chopped
- 1 cup 100% Whole Wheat elbow macaroni uncooked
- salt to taste
- pepper to taste
Instructions
- Combine tomatoes, beans, onions and vegetables
- Add broth
- Bring to a boil and simmer for 10 minutes
- Add Pasta
- Reduce heat and boil for 10-15minutes, until pasta is tender
- Serve
