A healthier version of Hawaiian Mac Salad for making your own version of the Hawaiian Plate Lunch! We reduced the mayo to just 1/4 cup for the whole recipe since it is yellow tier.
Ingredients
- 1/2 lb 100% Whole Wheat elbow macaroni
- 1 carrot small, shredded
- 5 scallions finely chopped
- 1 Tbsp apple cider vinegar
- 1/4 cup mayonnaise
- 3/4 cup plain Greek yogurt
- 1/4 cup milk
- 1 Tbsp extra virgin olive oil
- 1 Tbsp honey
- 1 tsp salt
- 2 tsp pepper
Instructions
- Cook pasta according to directions on the package. Drain and allow to cool to room temperature (rinse under cold water or let it cool naturally). Drain well.
- Put all the ingredients for the Hawaiian macaroni salad in a bowl and stir until evenly coated.
- Serve cold.

Did a little tweaking of flavors and this mac salad tastes just as good as the real thing but cleaner!
