As one of my friends said when I posted a sneak-peek picture of this recipe on Facebook, “You had me at Cinnamon Roll.”  Truer words have never been spoken, because this Cinnamon Roll Breakfast Parfait will own you at first bite.  My suggestion, and this is coming from a place of experience, is to make several at once because you will want to eat this every morning for breakfast; it’s that good.  (Hint: it makes a great dessert too, for when you just need something sweet at the end of the day.)

Cinnamon Roll Breakfast Parfait

Ingredients

  • 1 cup plain yogurt
  • 4 oz cream cheese
  • 2 Tbsp unsalted butter
  • 1/2 cup pecans
  • 1 Tbsp coconut sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

  • Combine yogurt and cream cheese (I used a blender). Set aside.
  • Melt butter and sugar in a small skillet over medium low heat (sugar will burn if it's too hot). Add pecans and cinnamon. Cook 2-3 minutes or until pecans are toasted.
  • Add 1/4 cup yogurt mixture to a parfait glass. (A wine glass or champagne flute works great, as does any tall glass.) Top with 2 tablespoons pecan mixture. Repeat layers, using half of each mixture. Repeat with second parfait glass.
