This Cheesy Green Beans and Kale side dish might take a little more effort than a “steam-in-the-bag” vegetable, but I promise you it’s worth it. (I don’t like sending you recipes that are a lot of work for little return, you can trust me on that. Buh-leave me.)

Ingredients
- 3 Tbsp extra virgin olive oil
- 1 each onion thinly sliced
- 8 oz porcini mushrooms sliced
- 1 1/2 lb green beans trimmed
- 2 tsp salt
- 1 tsp pepper
- 1/4 cup white wine
- 1/2 lb kale chopped
- 2 Tbsp lemon juice
- 1/4 cup parmesan cheese grated
Instructions
- Heat oil in a large skillet. Add onions. Cook until translucent, about 4 min. Add mushrooms, green beans, salt, and pepper. Cook 2 min. Add wine and cook an additional 5 min. Add kale, and cook another 4-5 minutes or until kale wilts. Add lemon juice and parmesan. Toss and serve immediately.
Notes
For vegan or dairy free, use dairy free parmesan cheese, or omit cheese.
