Who knew you could make grilled cheese on a waffle iron? And who knew it would make adorable little checkers on it when you did? It just had to be called Checkered Grilled Cheese.
Ingredients
Checkered Grilled Cheese
- 8 slices 100% Whole Grain Bread no HFCS
- 4 oz gouda cheese shredded
- 1/2 stick unsalted butter soft
Roasted Vegetables
- 1 lb broccoli
- 1/2 lb green beans trimmed
- 3 Tbsp extra virgin olive oil
- 1 Tbsp kosher salt
Instructions
Checkered Grilled Cheese
- Preheat waffle iron. Spread one side of each piece of bread with butter. Place 1 oz. cheese on un-buttered side, and top with another piece of bread (butter sides out). Cook in waffle maker 4-5 minutes or until bread is toasted and cheese is melted. Repeat with remaining bread and cheese.
Roasted Vegetables
- Preheat oven to 400. Cut broccoli into florets. (They look like miniature trees!) Cut green beans into 2 inch pieces. Toss vegetables with oil. Spread on a baking sheet. Sprinkle with kosher salt. Bake at 400 for 20 minutes or until beginning to brown.
