This healthy, egg free carrot cake is flavorful and moist, and perfectly spongy just like a good carrot cake should be. Topped with a 2 ingredient cream cheese frosting, this carrot cake mug cake tastes like heaven in a cup.
Ingredients
Carrot Cake
- 1/4 cup 100% whole wheat flour
- 1 Tbsp coconut sugar
- 1 tsp vanilla
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1/4 tsp baking powder
- 1/4 cup milk
- 1 Tbsp unsalted butter melted
- 2 tsp carrots shredded (about 1 medium carrot)
Cream Cheese Frosting
- 2 Tbsp cream cheese soft
- 1 tsp pure maple syrup
Toppings
- 1 tsp carrot shredded, optional
- 1 Tbsp pecans chopped, optional
Instructions
Carrot Cake
- Mix all ingredients in a microwave safe mug. Microwave on high 1 minute to 1 minute 15 seconds.
Cream Cheese Frosting
- In a small blender or food processor, combine both ingredients until smooth and creamy. You will need to scrape the sides frequently. (Personal blenders work great for this.)
Toppings
- Top carrot cake with cream cheese frosting, and garnish with additional shredded carrots and chopped pecans, if desired.
