If dinner had an easy button, these Teriyaki Chicken Lettuce Wraps would be it. They’re another healthy favorite from the One Bag Wonder category!
One bag wonders are a wonderful way to get healthy, delicious meals done without much fuss. Everything goes into one bag (if freezing) or one pot (choose slow cooker or Instant Pot!) and dinner is done with just the push of a button or two. In fact, we have an entire eBook full of them!
Ingredients
- 2 lbs ground chicken or ground turkey
- 1 bag frozen diced bell peppers or two green peppers, chopped
- 1 cup frozen diced onions or one onion, chopped
- 1 can water chestnuts drained, chopped
- 1 cup brown rice
- 2 tsp sesame oil
- 2/3 cup Bragg Liquid Aminos or coconut aminos
- 2 1/2 cups water
- 2 Tbsp honey or pineapple juice
- 2 Tbsp bottled minced garlic
- 1/4 tsp dried ginger
- 2 heads romaine lettuce or butter lettuce
- 2 each green onion thinly sliced
- 1 Tbsp sesame seeds
Instructions
To Cook Immediately: Slow Cooker
- Place all ingredients except lettuce, green onions, and sesame seeds into slow cooker. Stir well. Cover and cook 4 hours on low or 3 hours on high. Stir occasionally if possible.
- Serve chicken mixture in lettuce leaves. Top with green onions and sesame seeds, if desired.
To Cook Immediately: Instant Pot
- Place all ingredients except lettuce, green onions, and sesame seeds into ip. Stir well. Lock lid; set valve to sealing. Program for manual-high and 25 minutes. Allow for natural pressure release. Carefully open lid. Serve chicken mixture in lettuce leaves. Top with green onions and sesame seeds, if desired.
To Freeze
- Place all ingredients except lettuce, green onions, and sesame seeds into large zip top freezer bag. Mash with hands to combine. Freeze.
To Cook After Freezing: Slow Cooker
- Place frozen meal in slow cooker. Cook on low 8 hours or on high 6 hours, stirring occasionally if possible. Serve chicken mixture in lettuce leaves. Top with green onions and sesame seeds, if desired.
To Cook After Freezing: Instant Pot
- Place frozen meal in IP. Press saute. Allow to heat long enough for at least 1/2 cup liquid to accumulate in the bottom. Press cancel. Lock lid; set valve to sealing. Program for manual-high and 28 minutes. Allow for natural pressure release. Serve chicken mixture in lettuce leaves. Top with green onions and sesame seeds, if desired.

Can you cook this and freeze it to use later? I am preparing freezer meals for my daughter-in-law who is expecting her first baby.
Yes, you should be able to, although we’ve never actually tried it. Based on what’s in it, there shouldn’t be a problem with cooking it and then freezing it and reheating when ready to use.
