With no meat to brown, these “PDQ peppers” get stuffed Pretty Darn Quick! Perfect for a weeknight! We made these into jack-o-lantern peppers for Halloween night, but they’d be good on any night!
Ingredients
- 4 bell pepper any color
- 1 1/2 cup brown rice cooked
- 1 can jackfruit
- 1 can tomato sauce 8 oz
- 1 Tbsp bottled minced garlic
- 1 tsp salt
- 1 tsp Italian seasoning
- 1 1/2 cups mozzarella grated
Instructions
- Preheat oven to 350
- Slice the tops off all 4 peppers and set aside. Scoop out seeds and membranes and discard. Place in a round glass baking dish.
- In a medium bowl, mix cooked rice, tomato sauce, and next 3 ingredients. Stuff mixture into peppers. Top with cheese. Top with pepper tops.
- Bake at 350 for 15-20 minutes or until cheese is melted.
