And, while it’s difficult to improve on a classic basil and pine nut pesto, this healthy walnut pesto recipe shines in its own right. Fresh basil, is, of course available at your local grocer, but look for it in abundance at your local farmers’ market, or try growing your own. (Fresh basil is literally the ONLY thing I am able to grow in my garden.) For the record, the aroma of fresh-cut basil is one of life’s greatest gifts. True story.
Ingredients
- 1 cup fresh basil
- 1/2 cup walnut halves
- 4 Tbsp parmesan-reggiano cheese grated
- 1/4 cup walnut oil
- 1 Tbsp bottled minced garlic
- salt to taste
- pepper to taste
Instructions
- Combine all ingredients in a food processor or blender. Process to combine. Season with salt and pepper, to taste. Serve immediately or store up to 4 days tightly covered in the refrigerator.
