I’m telling you: something this easy cannot be good.  It can’t.  Otherwise, why would there be restaurants?

Ok fine.  Make it then.  Prove me wrong.  (She says, with her mouth full, as the tender juicy meat drips onto her keyboard.)

Slow Cooker Roast Beef Sandwiches

Ingredients

Roast Beef

  • 2 lbs chuck roast trimmed of fat
  • 1 Tbsp unsalted butter
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 onion cut into wedges
  • 1 Tbsp bottled minced garlic
  • 1/2 tsp dried thyme
  • 1/4 cup red wine

Horseradish Sauce

  • 1/3 cup mayonnaise homemade or clean, see notes
  • 1 Tbsp prepared horseradish no sweeteners listed in ingredients, see notes

Sandwiches

  • 8 each 100% whole grain hamburger buns or homemade ciabatta, see notes
  • 8 leaves romaine lettuce
  • 1 cup italian giardiniera optional, no sugar listed in ingredients

Instructions

To cook Immediately (Slow Cooker)

  • Melt butter on medium heat. Sprinkle roast with salt and pepper. Sear roast 1-2 minutes per side. Remove from pan. Place roast, onion, garlic, thyme, and wine in a slow cooker.
  • Cook on low 7 hours or on high 5 hours. Shred beef. Combine mayo and horseradish. Spread horseradish sauce on bread; top with shredded beef, lettuce, and giardiniera (if desired).

To cook Immediately (Instant Pot)

  • On sauté, melt butter. Sprinkle roast with salt and pepper. Sear roast 1-2 minutes per side. Press "keep warm/cancel." Add onion, garlic, thyme, and wine to roast in Instant pot. Lock lid; set valve to sealing. Program for meat/stew. When IP beeps at the end of the cycle, choose either quick release or natural release. Shred beef. Combine mayo and horseradish. Spread horseradish sauce on bread; top with shredded beef, lettuce, and giardiniera (if desired).

To Freeze

  • Melt butter on medium heat. Sprinkle roast with salt and pepper. Sear roast 1-2 minutes per side. Remove from pan. Place roast, onion, garlic, thyme, and wine in a large, zip top freezer bag. Freeze.

To cook after freezing (Slow Cooker)

  • Add frozen meal to slow cooker. Cook on low 9 hours or on high 7 hours. Shred beef. Combine mayo and horseradish. Spread horseradish sauce on bread; top with shredded beef, lettuce, and giardiniera (if desired).

To cook after freezing (Instant Pot)

  • Add frozen meal to instant pot. Turn to sauté. Let sauté until there is at least 1/2 cup liquid in the bottom. Press "keep warm/cancel." Lock lid; set valve to sealing. Program for meat/stew. When IP beeps at the end of the cycle, choose either quick release or natural release. Shred beef. Combine mayo and horseradish. Spread horseradish sauce on bread; top with shredded beef, lettuce, and giardiniera (if desired).

Notes

We used Trader Joe's Organic Mayo and Trader Joe's prepared horseradish for testing purposes.
We made this homemade Whole Wheat Ciabatta for these sandwiches, and were not disappointed!
