Pot Roast is such a classic!  And it is so for a reason.  It’s comfort food that with just one bite, will transport you to a simpler time.  Unless you use that new-fangled Instant Pot to make this healthy Garlic Pot Roast.

Garlic Pot Roast

Ingredients

  • 3 lb tri tip roast
  • 1 tsp Italian seasoning
  • 2 tsp kosher salt
  • 1 tsp coarse ground pepper
  • 1 tsp garlic powder
  • 2 Tbsp unsalted butter
  • 2 onion chopped
  • 1/4 cup red wine
  • 4 sweet potato peeled and cut into large chunks
  • 1 lb baby carrots
  • 2 cups vegetable broth no sugar listed in ingredients (slow cooker instructions)

Instructions

Slow Cooker Instructions

  • Cut roast into 2 inch (roughly) chunks. Arrange on a plate. Sprinkle pieces with dry seasonings.
  • Place onion pieces on the bottom of a slow cooker. Place meat on top of onions. Place potatoes and carrots on top of meat.
  • Cut butter into chunks. Arrange pieces of butter over vegetables. Drizzle with red wine. Add 2 cups vegetable broth.
  • Cook on low 8 hours or on high 6 hours. Strain beef and vegetables from liquid to serve.

Instant Pot Instructions

  • Cut roast into 2 inch (roughly) chunks. Arrange on a plate. Sprinkle pieces with dry seasonings.
  • Add butter to inner pot. Select Sauté. Add onions. Sauté onions in butter until browned and soft. Add wine and stir to scrape browned bits from inner pot. Select Cancel.
  • Add meat on top of onions. Add 1 cup water. Cover, and set to sealing. Select Manual-High and set time for 40 minutes. When machine beeps at the end of the cycle, select cancel, and do quick release.
  • Add carrots and potatoes on top of meat. Cover, and set to sealing. Select Manual-High and set time for 12 minutes. Use quick release. Strain beef and vegetables from liquid to serve.
