French Onion Soup

Ingredients

  • 5 onion thinly sliced
  • 6 Tbsp unsalted butter
  • 2 Tbsp bottled minced garlic
  • 2 bay leaf
  • 1 tsp dried thyme
  • 8 cups vegetable broth no sugar listed in ingredients
  • 8 slices 100% Whole Grain Bread no high fructose corn syrup, see notes
  • 8 oz fontina cheese sliced

Instructions

Instant Pot® Directions

  • Program for sauté. Add butter. Once butter is melted, add onions. Cook onions until they are softened and browned, about 10 minutes.
  • Add vegetable broth, bay leaves, and thyme. Program for manual-high. Set time for 10 minutes. Allow for NPR (natural pressure release) for 10 minutes, or completely.
  • Preheat broiler.
  • Remove bay leaves. Add soup to individual oven-safe bowls. Lay a slice of bread on top of the soup, then cover with cheese. Broil 2 minutes, watching closely. You want the cheese to melt and brown, but not burn.

Stovetop Directions

  • Melt butter in large stockpot. Add onions. Cook onions until they are softened and browned, about 10 minutes. Add vegetable broth. Cover and bring to a simmer. Simmer 30 minutes.
  • Preheat broiler.
  • Remove bay leaves. Add soup to individual oven-safe bowls. Lay a slice of bread on top of the soup, then cover with cheese. Broil 2 minutes, watching closely. You want the cheese to melt and brown, but not burn.

Notes

Our Whole Wheat Baguettes were born for this recipe, but any hearty whole grain bread will do in a pinch.
