We already have sweet potato fries on the website (even purple ones here), but these are extra special for those who like their fries extra crispy (but still not fried). Crispy Baked Sweet Potato Fries are amazing.

Extra Crispy Sweet Potato Fries

Ingredients

  • 4 sweet potato peeled and cut into french fry shapes
  • 3 Tbsp cornstarch
  • 1/4 cup extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp pepper optional

Instructions

  • Soak french fries in enough water to cover for at least 30 minutes; 60 minutes would be better. Dry fries on paper towels. Preheat oven to 450. Add dry fries to a large zip top plastic bag along with cornstarch and salt (and pepper if using). Seal bag. Shake to coat fries. Pour in olive oil. Seal again and shake again. Arrange fries in a single layer on a baking sheet. Note: make sure they do not touch for prime crispness.
  • Bake at 450 for 17-20 minutes or until browned and cooked through, turning once half way through.
