Don’t skip the homemade chips when you make these healthy Blackened Shrimp Nachos. They’re worth the extra effort (and some might argue they are the best part. Not me, but some. Somewhere. Maybe.) Oh, and this would probably go well with our guacamole…but what doesn’t go with guacamole, right?
Ingredients
- 1 lb shrimp pre cooked
- 1/2 tsp paprika
- 2 tsp garlic powder
- 1 1/2 tsp salt
- 1 tsp cumin
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp cayenne pepper
- 1 1/2 tsp pepper
- 1 tsp oregano
- 1 tsp extra virgin olive oil
- 1 cup cheddar cheese grated
- 24 homemade tortilla chips or store-bought, see notes
- 2 green onion thinly sliced
- 1/3 cup cilantro chopped
- 4 Tbsp pickled jalapeno slices optional
Instructions
- Preheat oven to 350. Layer 12 chips on the bottom of each of 4 oven safe au gratin dishes or 5" cast iron skillets. Combine shrimp, paprika, garlic powder, salt, cumin, onion powder, dried thyme, cayenne, pepper, and oregano in a small bowl. Stir until shrimp are well coated.
- Heat medium skillet over medium heat. Add 1 tsp oil. Add seasoned shrimp. Heat 7 minutes or until shrimp are hot.
- Add hot shrimp to chips in pans. Top evenly with cheese. Bake at 350 10 minutes or until cheese melts. Remove from oven and top with green onions, cilantro, and jalepenos.
