1-2-3 Eat! meals are the best! This one pairs 1-2-3 Eat Grilled Pork Chops (the protein), with roasted applesauce (serving as the carbs/starch), and sauteed zucchini (veggie).
Ingredients
Roasted Applesauce
- 10 apple any variety
- 2 tsp extra virgin olive oil
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp dried ginger
- pinch ground cloves
- 2 Tbsp honey
Sauteed Zucchini
- 2 zucchini
- 2 Tbsp unsalted butter
- salt
Pork Chops
- 4 boneless pork chop
Instructions
Pork Chops
- Sprinkle 4 pork chops with salt and pepper. Grill over med heat 4-5 minutes per side, or until cooked through and no longer pink.
Roasted Applesauce
- Peel, core, and chop apples into about 1 inch pieces. Toss apples into a bowl and add remaining ingredients. Arrange apples on a baking sheet. Bake at 400 for 30 min or until the largest pieces are soft. Remove from oven. For smooth applesauce, transfer cooked apples to a blender and process until smooth. For chunky applesauce, mash with a fork.
Zucchini
- Slice zucchini. Melt butter in a medium skillet over med heat. Add zucchini, and stir well. Cook 7 minutes or until tender-crisp. Season with salt and pepper, to taste, if desired.
