1-2-3 Eat! Balsamic Chicken, Grilled Brussels Sprouts with Onions, Parmesan Noodles

Ingredients

Balsamic Chicken

  • 1/4 cup extra virgin olive oil
  • 1/4 cup Balsamic Vinegar
  • 2 Tbsp honey
  • 1 tsp salt
  • 1/2 tssp pepper
  • 4 boneless, skinless chicken breast

Grilled Brussels Sprouts with Onions

  • 1 lb brussels sprouts fresh
  • 1 yellow onion
  • 3 Tbsp extra virgin olive oil
  • 2 tsp salt

Parmesan Noodles

  • 1/2 lb 100% whole wheat pasta any shape
  • 2 Tbsp unsalted butter
  • 1/2 cup parmesan cheese grated

Instructions

Balsamic Chicken

  • Combine chicken and remaining ingredients in a large zip top plastic bag. Refrigerate 1 hour. Preheat grill. Reduce heat to medium-low. Grill chicken 8-10 minutes on each side or until chicken is no longer pink and juices run clear.

Grilled Brussels Sprouts with Onions

  • Preheat grill. Slice ends of sprouts. Slice in half. Cut onion into slices vertically. Place sprouts and onions in a bowl. Drizzle with olive oil. Toss well. Add vegetables to a grill basket. Sprinkle with salt. Grill over medium heat 25-30 minutes, stirring occasionally. Add grilled veggies to serving bowl. Cover with plastic wrap, and let steam another 10 minutes.

Parmesan Noodles

  • Bring 3 quarts of water to a boil. Add 1/2 lb. noodles. Boil 8 minutes or until noodles have reached desired doneness. Drain. Toss with 2 Tbsp. butter and 1/2 c. parmesan cheese.
