1-2-3 Eat! Baked Orange Roughy, Parmesan Zoodles-n-Noodles

This simple “1-2-3 Eat!” meal consists of a baked white fish (such as orange roughy) with a fun “zoodles-n-noodles” combo.  Combining zucchini noodles, or zoodles, with regular whole wheat noodles, can be a great way to ease in the unfamiliar— by combining it with the familiar! (plus, it’s fun and delicious!)

1-2-3 Eat! Baked Orange Roughy, Parmesan Zoodles-n-Noodles

Ingredients

Baked Orange Roughy

  • 4 orange roughy filet 4-6 oz. each, or any mild white fish
  • 2 Tbsp Italian seasoning
  • 2 tsp salt
  • 1 tsp pepper

Parmesan Zoodles-n-Noodles

  • 2 zucchini large, zoodled or shredded
  • 8 oz 100% whole grain spaghetti noodles thin
  • 1/2 cup parmesan cheese grated
  • 2 Tbsp unsalted butter

Instructions

Baked Orange Roughy

  • Preheat oven to 350. Spray glass baking dish with cooking spray.
  • Add fillets. Sprinkle fillets with Italian seasoning, salt, and pepper. Bake, uncovered, 20 minutes, or until fish flakes easily with fork.

Parmesan Zoodles-n-Noodles

  • Cook pasta according to package directions. Drain. Combine hot noodles with zoodles. Add butter and cheese. Stir until butter and cheese are melted.

  1. Made only the fish last night for supper and it was a hit with my 13 year old son!! I liked how it was gluten free and not a lot of excess dairy.
