Blackened Tilapia with Asparagus and Cheesy Zoodles is actually a recipe that one of our members asked us to clean up to make healthier!
Ingredients
Blackened Tilapia
- 1 tsp salt
- 1/2 tsp pepper
- 1 Tbsp paprika
- 2 tsp garlic powder
- 4 tsp onion powder
- 1 tsp dried thyme
- 1 tsp cayenne pepper
- 1 tsp oregano
- 4 tilapia filet or other white fish, thawed, 6 oz. each
Asparagus
- 1 lb asparagus trimmed
Cheesy Zoodles
- 2 zucchini medium, zoodled
- 8 oz cheddar cheese grated
- 2 oz cream cheese softened
- 1 Tbsp plain Greek yogurt
- salt to taste
- pepper to taste
Instructions
Blackened Tilapia
- Heat oven to 425. Mix first 8 ingredients in a small bowl. Rub spice mix onto each side of each fillet. Add fillets to a baking dish. Bake at 425 for 11-15 minutes or until fish flakes easily with fork.
Asparagus
- Cut into 2 inch pieces. Insert steamer basket into medium saucepan. Fill saucepan with 2-3 inches of water. Place asparagus in steamer basket, place over medium high heat. Bring to a boil, cover. Steam 6 minutes.
Cheesy Zoodles
- Heat cheeses in a small skillet until melted, stirring frequently. Remove from heat. Stir in yogurt, salt, and pepper; stir until smooth. Add zoodles and stir to coat.
