BBQ Chicken Foil Packets are perfect for the grill or the bonfire but they can also be made in the oven.  You can even let each person choose their own veggies and sauces.

BBQ Chicken Foil Packets, Corn on the Cob

Ingredients

BBQ Chicken Foil Packets

  • 4 boneless, skinless chicken breast about 4 oz. each
  • 1 cup Gracious Pantry BBQ sauce see notes
  • 1 zucchini sliced
  • 1 red bell pepper cut into thin strips
  • 1 pint baby bella mushrooms sliced
  • 1 tsp salt
  • 1 tsp pepper
  • foil 8 sheets (12x15)

Corn on the Cob

  • 4 ears corn on the cob
  • unsalted butter optional
  • salt optional

Instructions

BBQ Chicken Foil Packets

  • Preheat grill to medium heat.
  • Layer two sheets of foil on top of each other. Place 1 chicken breast on top of layers. Season with salt and pepper.
  • Spoon 1/4 c. BBQ sauce on top of chicken. Top chicken with one fourth of each of the vegetables.
  • Bring opposite sides of foil up and over chicken and vegetables. Fold over to seal. Pinch other sides together to seal the packet. Repeat with remaining foil, chicken, and vegetables to make 4 packets.
  • Grill over medium heat 20 minutes or until chicken is done.

Corn on the Cob

  • Shuck corn. Bring large pot of water to a boil. Boil corn 10 minutes. Serve with butter and salt, if desired.

Notes

Just skip the butter for dairy free.
NOTE:  Hak's makes a clean bbq sauce, but if you can’t find any clean commercial sauce, feel free to make your own with THIS RECIPE.
