Healthy Breakfast Egg Biscuits with bacon make a great breakfast and can even be made and frozen individually for a quick grab and go breakfast.
Ingredients
Bacon, Egg, and Cheese Biscuits
- 4 slices real american cheese or cheddar
- 4 slices uncured bacon cooked crispy
- 8 egg
- 1 Tbsp unsalted butter
Fresh Orange Wedges
- 4 orange
Homemade Biscuits
- 2 cups 100% whole wheat pastry flour
- 4 tsp baking powder
- 4 Tbsp buttermilk powder
- 1/2 tsp salt
- 4 Tbsp unsalted butter cold
- 1 cup milk
Instructions
Homemade Biscuits
- Preheat oven to 400. Combine dry ingredients in a bowl. Cut in butter using two knives or a pastry blender until mixture resembles coarse crumbs. Stir in milk. Place mixture on floured cutting board. Knead a few times. Hand press the dough into 1/2 inch thick. Using round cookie cutter (or any shape), cut biscuits. Place biscuits on a parchment-lined baking sheet. Bake at 400 for 15-20 minutes or until browned.
Bacon, Egg and Cheese Biscuit Sandwiches
- In a large skillet, melt butter. Cook eggs to your desired doneness. Serve on biscuits with 1/2 piece cheese and 1/2 piece bacon on each sandwich. Makes 8 sandwiches.
Fresh Orange Wedges
- Cut oranges into wedges. Serve.
