Avocado Grilled Cheese: Avocado (duh), baby spinach, pepper jack cheese, the perfect buttery golden brown. Lunch (or dinner) is served! We served this with our Summer Corn Chowder originally.
Ingredients
- 8 slices 100% Whole Grain Bread with no high fructose corn syrup
- 2 avocado ripe, sliced
- 1 cup baby spinach fresh
- 4 slices pepper jack cheese
- 3 Tbsp unsalted butter soft
Instructions
- Butter one side of each slice of bread. Preheat pan over medium heat.
- Layer the avocado, spinach, and cheese on the non-buttered side of the bread. Top with second slice.
- Cook, butter side down, 2-3 minutes or until golden, turn to cook the other side.
- Remove from pan and repeat with remaining sandwiches.
