Healthy Alaskan Halibut Cakes paired with steamed asparagus and whole wheat cornbread for a full, healthy meal you’ll love. Feel free to substitute any firm white fish for the halibut, if you choose.
Ingredients
Alaskan Halibut Cakes
- 1 lb halibut filets cooked and flaked
- 1 cup 100% whole grain breadcrumbs see notes
- 1 tsp Italian seasoning
- 1 egg
- 1/4 cup plain yogurt
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp mustard
- 3 Tbsp coconut oil
Steamed Asparagus
- 1 lb asparagus
Whole Wheat Cornbread
- 1 cup cornmeal
- 1 cup 100% whole wheat flour
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/4 cup honey
- 1/4 cup extra virgin olive oil
- 1 egg
- 1 cup milk
Instructions
Alaskan Halibut Cakes
- Mix all ingredients except oil in a medium bowl. Form into 6 patties. Lightly sauté patties in coconut oil, about 5 minutes per side.
Steamed Asparagus
- Break tough ends off of asparagus. Discard. Cut remaining asparagus into 2 inch pieces. Place in steamer basket over 2 inches of water. Steam 7-8 minutes or until bright green and tender-crisp.
Whole Wheat Cornbread
- Preheat oven to 400. Mix dry ingredients in a bowl. Add wet ingredients, and mix just until combined. Pour batter into greased 8 or 9 inch cake pan or large cast iron skillet. Bake at 400 for 20 minutes or until toothpick inserted in center comes out clean. 8 servings.
