Keto Cauliflower Mash with cream cheese is the perfect keto side dish for Thanksgiving dinner (or anything remotely like it). The cheesy, creamy texture of this dish will make any low carb nut salivate.
Ingredients
- 1 head cauliflower large, cut into florets, about 2 lbs
- 6 oz cream cheese
- 1/2 tsp salt
- 1/4 tsp pepper
- unsalted butter optional
Instructions
Stovetop
- Fit a large pot with a steamer basket. Fill bottom with water. Add cauliflower to steamer basket. Cover. Bring to a boil and allow to steam 20 minutes.
- Drain water. Return cauliflower to pot. Puree with an immersion blender.
- Add cream cheese, salt, and pepper. Puree again with immersion blender until cream cheese is melted. Add butter and stir to melt if desired.
Instant Pot®
- Add 1 cup water to instant pot. Add cauliflower in steamer basket or directly in water (steamer basket makes it easier to drain) Seal, program for manual, high, and decrease time to 8 minutes.
- When cook time ends, select either natural pressure release or quick release. Drain water. Using an immersion blender, puree cauliflower.
- Add cream cheese, salt, and pepper. Puree again with immersion blender until cream cheese is melted. Add butter and stir to melt if desired.
