This healthy indian corn casserole uses fresh, whole ingredients to give a healthy twist on this spicy dish. Adjust the cayenne and chili as necessary.

Ingredients
- 3 cups corn
- 2 zucchini chopped
- 1 cup frozen diced onions or fresh
- 1 can green chiles
- 1/2 cup 100% whole wheat flour
- 1 tsp cumin
- 1 tsp Chili Powder
- 1/2 tsp pepper
- 1 tsp salt
- 2 cans black beans
- 1/4 tsp cayenne pepper
Instructions
- Combine zucchini, onion, and chiles in a skillet. Cook over med-low heat, covered, about 10 minutes.
- Add flour, cumin, chili powder, pepper, salt, cayenne, corn, and beans. Stir well. Continue cooking 4 more minutes.
- Add mixture to baking dish.
- Bake at 325 for 25 min.
