When you love food as much as I do, and when it really doesn’t matter if it’s paleo, gluten free, vegetarian, vegan, low carb, low fat, Keto or what, as long as it’s REAL food, it’s pretty freakin’ difficult to narrow your favorites down to ten of “Heidi’s Favorite Recipes”. I mean, if you really want to know, my recipes are like my children. I care for them the same!
Still, if my assignment is to give our readers a top ten list, then by golly I’m gonna git ‘er done! So here are my CURRENT top 10 favorite recipes:
#10: Rainbow Veggie Pad Thai
These colors, though! This one will really make you “taste the rainbow.” We served this with Coconut Shrimp, but it is equally good on its own!
#9: Peanutty Noodles
This is the one I make when my husband will be out of town, because I love it but he doesn’t prefer any “dinner” that is made with peanut butter. (He likes PB for breakfast only!) I can add shrimp, chicken, or pork to this recipe and change it up, depending on what I have in the freezer. So good!
#8: Meatball Sliders
These are to die for. The only reason they’re not higher on the list is that they’re not “quick and easy.” Still, they are worth the effort!
#7: 3 Ingredient Grilled Cheese and 5 ingredient Tomato Soup
When I have nothing planned for dinner, or when my plans fall through, all the ingredients I need for this delicious meal is already on hand. This is my favorite “no shop no chop” dinner.
#6: Grilled Balsamic Vegetables
I am truly sad when we run out of these leftovers. This is my hands-down-very-favorite veggie side dish! MUST try!
#5: Fish Po’Boys
You don’t have to be poor or even on a budget (or a boy) to love these yummy sandwiches. But, it doesn’t hurt that they are budget-friendly!
#4: Grilled Chicken Parmesan
If I really want to impress a dinner guest with my culinary skills (ahem), I make this. Because it doesn’t require any skills! But the presentation is out of this world! And the flavor— well, you should try it for yourself.
#3: Sweetest Orange Salmon
This goes together in a flash with freezer and pantry staples, so it’s another amazing “no shop no chop” entree. I like to serve it with a steamed green veggie (7 minute green beans!) and brown rice for a 1-2-3 Eat! meal.
#2: Mac-N-Cheese
I have loved mac and cheese all my life. I used to put away the stuff from the blue box like nobody’s business, even AFTER I learned how to cook. It wasn’t until 9010 Nutrition that I learned how to make it healthy and homemade, and it went from being a quick, easy and cheap meal that I loved, to being a meal that I LOVED that also happened to be quick, easy, and cheap!
#1: Heidi’s Vegetarian Chili
A well-stocked pantry and a slow cooker or instant pot is all you need for this hearty dish that will feed you for days. Try this over whole wheat cornbread or over a baked sweet potato. I especially like it with sour cream and cilantro on top.
