Such a long name for such an easy meal! Serve this Parmesan-Asiago Crusted Salmon with Lemon-Cream Sauce with brown or wild rice, if desired.
Ingredients
Salmon
- 4 salmon fillet 4-6 oz each
- 1 Tbsp Dijon mustard
- 1 cup 100% whole wheat panko
- 3 tsp unsalted butter melted
- 1/3 cup parmesan cheese grated
- 1/3 cup asiago cheese grated
- 2 Tbsp fresh parsley chopped
- 2 Tbsp fresh dill chopped
- 1/2 tsp salt
- 1/4 tsp pepper
Lemon-Cream Sauce
- 3/4 cup white wine vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp lemon juice
- 4 oz cream cheese softened
- 1/2 tsp honey
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
Salmon
- Spread 1 Tablespoon dijon mustard evenly over salmon. Combine panko, melted butter, parmesan, asiago, parsley, dill, zest, salt, and pepper in a blender or food processor. Process until crumbly and well combined. Coat salmon with panko mixture. Place salmon on a parchment-lined baking sheet.
- Bake at 375 for 20 minutes or to desired doneness.
Sauce
- While salmon is baking, combine white wine vinegar, 1 tablespoon dijon, lemon juice, cream cheese, honey, salt and pepper in a blender or food processor. Process until smooth.
- Plate salmon over 7 Minute Green Beans, if desired. Drizzle sauce over salmon.
