Healthy Apple Pie French Toast? Mhm. It’s true. This recipe uses 100% whole grain bread and only honey for sweetener, and it tastes like a treat.

Another idea:  Instead of just toasted walnuts, try topping this with our Apple Pie Granola.

Apple Pie French Toast

Ingredients

Apple Pie Filling

  • 8 apple various, see notes
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp honey
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp dried ginger
  • 1/4 tsp ground cloves

French Toast

  • 6 egg
  • 1/2 cup milk
  • 1 tsp cinnamon
  • 8 slices 100% Whole Grain Bread no high fructose corn syrup

Toasted Walnuts

  • 4 Tbsp walnuts

Instructions

Apple Pie Filling

  • Preheat oven to 400.
  • Peel, core, and chop apples. Place in a large bowl. Add oil, honey, and spices. Toss well.
  • Place in a single layer on a baking sheet. Bake at 400 for 20 minutes or until apples are soft.

French Toast

  • Heat skillet or griddle to medium heat. Combine eggs, milk, and cinnamon. Beat well.
  • Soak each bread slice in egg batter. Cook in skillet 3-4 minutes on each side, or until cooked through. Top with apple mixture and toasted walnuts.

Toasted Walnuts

  • Heat small skillet over medium heat. Add walnuts. Cook 2-3 minutes, stirring frequently. Walnuts are done when they are slightly browned.

  1. How about making the apple topping and putting it in the French toast cassarole (for those who don’t do cream cheese)? Do you think that would work?
