This healthy Southern Pot Roast (also commonly known as Mississippi Pot Roast) has a bold and tangy flavor from pepperoncinis. I thought it was a bit odd the first time I heard of it, but after trying it, I was hooked. I think you will be too. We paired this with a super simple mashed cauliflower that will surprise you as well.
Ingredients
Southern Pot Roast
- chuck roast 3-5 lb
- 2 Tbsp onion powder
- 2 Tbsp dried minced onion
- 1 tsp salt
- 1 tsp dried parsley
- 2/3 tsp celery seed
- 3/4 tsp garlic powder
- 1/2 tsp dried chives
- 1/2 tsp ground turmeric
- 1/4 tsp dried dill
- 1/4 tsp pepper
- 1 stick unsalted butter (1/2 cup)
- 12 oz pepperoncini peppers with juice
Mashed Cauliflower
- 1 head cauliflower large, cut into florets
- 2 Tbsp unsalted butter
- salt to taste
- pepper to taste
Instructions
Southern Pride Pot Roast
- Combine all ingredients in a slow cooker. Cook on low 8 hours or on high 6 hours. Shred meat. Serve over mashed cauliflower.
Mashed Cauliflower
- In a large steamer basket, steam cauliflower until soft. Transfer to a blender. Add a little bit of the cooking water and the butter. Blend until smooth. Sprinkle with salt and pepper to taste.
