Slow Cooker Sweet and Sour Meatballs is so easy and tasty, but don’t forget to start the slow cooker early enough in the day!
Ingredients
- 2 lb ground chicken 90% lean or leaner
- 1 zucchini medium, shredded
- 2 slices 100% Whole Grain Bread no HFCS
- 4 Tbsp milk fat free
- 2 egg beaten
- 2 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1/3 cup Bragg Liquid Aminos
- 2 Tbsp honey
- 1 Tbsp bottled minced garlic
- 1 piece fresh ginger 1 inch, peeled and minced
- 1/4 tsp crushed red pepper
- 1 red bell pepper cut into 2 inch pieces
- 1 green bell pepper cut into 2 inch pieces
- 1 onion thinly sliced
- 2 cups pineapple fresh, about 1/2 of a large pineapple or 1 small
- 1/4 cup cilantro chopped
- 1 1/2 cups brown rice uncooked, see notes
Instructions
- Soak bread in milk. Shred zucchini and squeeze out excess moisture by squeezing it in paper towels. Combine chicken, zucchini, eggs, salt, pepper, and garlic. Add bread. Mix well and form into 12 meatballs. Place meatballs in a slow cooker. Add bell peppers, onion, and pineapple to the slow cooker. In a small bowl, combine liquid aminos, honey, garlic, ginger and red pepper flakes. Pour over chicken and vegetables. Cook on low 8 hours or on high 6 hours. 40 minutes before serving. Cook rice according to package directions or see notes section. Serve meatballs, sauce, and vegetables over rice.
