Pork Chops and Sauerkraut paired with sauteed broccolini and a baked sweet potato. It’s a full “1-2-3 Eat!” meal that everyone will love.

1-2-3 Eat! Pork Chops with Sauerkraut, Sautéed Broccolini, Baked Sweet Potatoes

Ingredients

Pork Chops with Sauerkraut

  • 4 pork chop
  • 2 tsp extra virgin olive oil
  • 1 yellow onion thinly sliced on the vertical
  • 1 jar sauerkraut with no sugar added, or homemade
  • 2 granny smith apple cored and diced (peeled or not)
  • salt to taste
  • pepper to taste
  • 1/2 cup apple cider vinegar or beer

Sauteed Broccolini

  • 1 lb broccolini
  • 2 tsp unsalted butter
  • 1 tsp salt
  • 1/4 tsp pepper

Baked Sweet Potatoes

  • 4 sweet potato medium

Instructions

Pork Chops with Sauerkraut

  • Preheat oven to 350. Heat skillet over med heat. Sprinkle pork chops with salt and pepper. Add chops to skillet and cook 5 min per side or until well-seared and mostly cooked through. Remove chops from skillet and place in baking dish. Top with onions.
  • In a med. bowl, mix sauerkraut, apples, and beer (or vinegar). Pour over pork chops and onions. Cover tightly with foil and bake 50 minutes or until pork is cooked through and tender.

Sauteed Broccolini

  • Heat butter in med skillet until melted. Add broccolini. Cook 4 minutes, stirring occasionally. Remove from heat and season with salt and pepper, to taste.

Baked Sweet Potatoes

  • Pierce sweet potatoes with fork. Place in a square glass baking dish. Bake at 400 for 1 hour or until soft all the way through

Notes

NOTE:  For dairy free, try cooking the broccolini in olive oil or coconut oil
