This is another classic “1-2-3 Eat!” meal. Marinated Flank Steak with shoestring sweet potatoes and grilled cauliflower steaks. It’s so easy!
Ingredients
Marinated Flank Steak
- 1/4 cup extra virgin olive oil
- 1/4 cup Balsamic Vinegar
- 2 tsp bottled minced garlic
- 2 tsp honey
- 1 tsp salt
- 1 tsp pepper
- 2 lbs flank steak
Shoestring Sweet Potatoes
- 4 sweet potato small
- 1 Tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp pepper optional
Cauliflower Steaks
- 1 head cauliflower sliced on the vertical into 1/2 inch “steaks”
- 2 tsp extra virgin olive oil
- 1 Tbsp salt or to taste
- 1 tsp garlic powder
- 1 tsp pepper
- 1 tsp paprika
Instructions
Marinated Flank Steak
- Place steak in a glass baking dish. Combine first 6 ingredients in a blender. Blend and pour over steak. Turn steak to coat all sides. Cover tightly with plastic wrap. Place in refrigerator and marinate 30 min to 1 hour. (or as long as overnight)
- Preheat grill over med heat. Coat grill rack with cooking spray. Grill steak 4-5 min on each side or until it has reached desired doneness. Slice thinly agains the grain and arrange on a platter.
Shoestring Sweet Potatoes
- Using a spiralizer, process potatoes into long spirals. Toss spiraled potatoes with olive oil. Arrange in a single layer on a baking sheet (hint: line your baking sheet with foil for easier clean up). Sprinkle with salt and pepper. Bake at 400 for 25 min. Turn broiler on and broil 2-5 min or until browned and crispy. See notes about alternatives to a spiralizer.
Cauliflower Steaks
- 4. Mix dry seasonings in a small bowl. Brush cauliflower with oil, then sprinkle with seasoning. Grill over indirect med heat for 4 min on each side, or until tender-crisp.
