This Lemon Garlic Chicken is a simple baked chicken that doesn’t compromise on flavor!  It’s paired with brown rice and a side salad for a complete meal.

Ingredients

Lemon Garlic Chicken

  • 4 boneless, skinless chicken breast medium
  • 2 Tbsp lemon juice
  • 4 Tbsp unsalted butter
  • 3 Tbsp bottled minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 2 lemon wedged

Side Salad

  • 5 oz spring greens
  • 1/2 cucumber sliced
  • 12 grape tomatoes
  • 1/4 cup pepitas toasted

Creamy Garlic Salad Dressing

  • 1/4 cup extra virgin olive oil
  • 1/2 cup apple cider vinegar
  • 1 Tbsp bottled minced garlic
  • 3 Tbsp lemon juice
  • 2 Tbsp fresh basil
  • 1 tsp salt
  • 1 Tbsp honey

Brown Rice

  • 1 1/2 cups brown rice
  • 3 cups vegetable broth or water

Instructions

Lemon Garlic Chicken

  • Preheat oven to 400. Place chicken in a glass baking dish. Cut butter into pats, and place on and around chicken. Drizzle with lemon juice. Sprinkle garlic on and around chicken. Sprinkle with salt and pepper. Arrange lemon wedges around and in between chicken. Cover tightly with foil. Bake, covered, at 400 for 30-40 minutes or until chicken is done.

Side Salad

  • Arrange greens in 4 bowls or plates. Top with cucumbers and tomatoes. Sprinkle with pepitas. Drizzle with dressing.

Creamy Garlic Salad Dressing

  • Combine all ingredients in a blender. Blend until smooth and creamy. 6 servings.

Brown Rice

  • Combine brown rice and broth or water in a saucepan. Bring to a boil. Reduce heat, cover, and simmer 20 minutes or until all liquid is absorbed.
